There is a problem with popcorn! Most North American grown corn is genetically modified to be herbicide-resistant. All the weed-killing has led to a massive increase in the use of herbicides containing the human carcinogen glyphosate. Then there is how it is prepared … and what it’s flavoured with that can also be incredibly unhealthy/toxic.
But … we are solutions-focused, so here is our recipe for delicious, organic popcorn that honours the Kind Food Plate! Enjoy it as a snack or while watching a movie.
The trick to this recipe is to cook the popcorn at high heat with the lid on so the moisture does not escape.
Popcorn
3 tbsp oil (we like avocado)
1/3 cup organic popcorn kernels (Eden is widely available, but buy from a local, organic farmer first if possible – our picks our picks are Oak Manor and Nature’s Way).
Topping
1/4 cup of olive or avocado oil
1/2 cup of nutritional yeast
2 tsp of kelp granules
½ tsp of cayenne (optional)
1/ In a heavy bottom deep (soup) pot on high heat, add oil and corn kernels. Place lid on pot and keep on high heat to pop.
2/ In bottom of large bowl, combine half of the topping ingredients
3/ Once popping sound reduces to about once every 3 to 5 seconds, remove from heat & pour popcorn into bowl with mixture, toss and pour remaining topping ingredients over top … toss again.
4/ Serve immediately (or cover and store at room temperature for a day or two).
